I was strolling through Nishiki Ichiba yesterday and ran across this. I have been to TanZan brewery, so I thought I would pick up a bottle. Did you know the toji san at this brewery is a woman? There are actually three female toji san that I know of in Kyoto.


“Momo no Shizuku” – “Ai Yama”

Why do I like nihonshu? Because I can drink “Momo no Shizuku” made with “Ai Yama” saka mai. “Momo no Shizuku” is the signature brand of nihonshu made by Matsumoto Shuzo. I got this bottle the other day and it’s already gone! Did you know about this variety of saka mai? I didn’t, but I do now! I’m going to look for other breweries using this particular variety of saka mai. “Saka mai” is the Japanese for sake rice. Most nihonshu made in Japan is made with a variety of rice grown specifically for making sake.
